The Ecollect forms cannot be completed while using the app on mobile—the links redirect parents to sign in through a browser. The forms work when accessed on a desktop, so this is a mobile-specific issue.
I've checked with support to make sure everything is up to date already.

Have you verified the app version? Forms are working as expected in version 26.2.1 for us. Alos, is it all users? I would have users attempt to delete the app and reinstall. This was a fix for us late last year.

App is updated. I've personally deleted/reinstalled the app multiple times. PS Support says it's a known bug and they are working on it.
