If a teacher starts a unit in Q1 but that unit will finish in Q2, would there be any issues to be aware of?

For example, if the unit assignments were completed in Q1 but the final exam was in Q2, is there a way to ensure that the weighting remains consistent for that unit overall?

That will depend largely on your schools setup.  If each Q is a separate term or just a marking period can have a significant difference in the answer.  If grade calculations are based on the semester and not quarters, then it will not matter when the assignment is dated.  If they are calculated separately then it can make a big difference in the overall grade.
