Currently, we do not have the ability to ability for teachers to create their grade book exceptions (missing, incomplete, exempt) and dictate what value is inputted when a grade book exception is selected in Schoology.
However, you can log this as an Enhancement Request on PowerSchool Ideas Portal so that the product team can take a look at this. This article should walk you through how to raise an Enhancement Request.
