I have a student who is enrolled in 2 classes. She entered the student code for one, and then accidentally entered the parent code in for the other one. How can I switch her account from parent to student?
Go to Domain Control, look for Accounts and then this student's profile. Click on Edit and re-assign role connected to his/her profile. Save.
Where do I find that link? I have a solo teacher account. If I can't change it on my end, can the student change it on hers?

You should have an option to remove a user from your roster (Manage > Remove from Roster). Then they can join as a student. Please let me know if you need additional assistance with this.
